Top of the World Elementary School Students Sample Fresh Produce from the Outdoor Classroom

The colorful landscape of citrus fruit trees, herbs, vegetables and flowers of TOW’s Outdoor Classroom creates a popular hands-on learning experience for students. In addition to the many horticulture lessons that are gleaned from this opportunity, students also have the opportunity to learn about nutrition.

Outdoor Classroom Coordinator Terry Hustwick remarks, “In the afterschool and classroom programs, students have the opportunity to sample the fruits and vegetables that are growing in the garden area. Garden discussions include comparing and contrasting textures, taste and appearance of food that is available during the current season.”

She continues, “During the year, students harvest lettuce and other vegetables they have grown and prepare their own salads. By dining alfresco, we are able to enjoy the sights and sounds of the garden environment and enjoy the pride of growing your own food.”

New this year is the addition of a straw bale garden by Sarah Wolsey’s 5th grade class. The straw is used as a base in which a variety of plants can grow. Over time the bale becomes compost, which enriches the soil.

Community commitment is key to the Outdoor Classroom’s success. In 1967, Terry Hustwick began teaching at TOW. When she retired from teaching in 2003, she became the Outdoor Classroom Coordinator. The program is supported by the TOW PTA, parent volunteers, local businesses and community organizations. This year the Outdoor Classroom received grants from the Laguna Beach County Water District and the Laguna Beach Garden Club. These grants made it possible to build a water-wise and fire-safe demonstration garden.
